The season offers a plethora of fresh produce options
Summer is not only a time to explore the outdoors, but also a great opportunity to enjoy the season’s fresh produce.
This year, the farm offered 20 shares to students and community members, Cashin said. For $130, the farm offers a nine-week long “salad plus” CSA that aims to supply customers with weekly salad ingredients as well as other fresh produce to “add some interest to your cooking,” Cashin said.
Ariana Sopher ’14, who shares a CSA with her off-campus housemates, said the experience has been great. The vegetables are “really tasty” and have inspired Sopher and her housemates to cook meals together more often, she said.
“We make a lot of stir fry and a lot of pesto pasta with veggies,” she said. “When we get basil in the CSA, we make pesto right away and freeze whatever we don’t think we’ll use that week. The pesto lasts a long time that way, and the basil is delicious.”
Sopher also said she enjoys being surprised by the variety of produce in each week’s delivery. Some of her favorites include the tomatoes, kale and swiss chard.
Natalie Flowers ’14 said she has had “a ton of fun” with her CSA this summer and enjoys looking up new recipes and learning to be inventive with the ingredients that she receives.
Using her CSA can be fun challenge from week to week, she said.
“My roommates and I try to make at least one dinner with it every week, which ranges from homemade pizzas to pastas and delicious salads,” Flowers said. “Lask week I even used my zucchini to make zucchini bread — delish.”
